    Situated in the Aubert commune, in the South West of France, the 3 hectares of Petit Manseng which make up the estate are planted in terraces,facing the Pyrénées, in clay and pebblesoil. The vines have an average age of 20 years and are exposed to the South-East. Barrel fermented and aged mostly in 450 and 600 litre-barrels, as well as some of Dagueneau's famous cigar barrels. Designed by the late Didier, these barrels are 350 liters and agressively elongated. The wine produced is a fine balance between sweetness and acidity with rich apricot and peach notes and nuances of caramel and citrus.

    This is Dagueneau's Grand Cru, if you will. Because of the lower clay content in the soil, this wine tends to be more austere in its youth than the Pur Sang , which explains why it often receives lower scores wine journals that rate how a wine is currently drinking. Do not be fooled! Those familiar with older vintages of Silex will attest to the fact that if given the time in bottle, it will always rise above the rest.

    Jean Marc Pillot’s 2014 Chassagne-Montrachet 1er Cru Les Vergers is bright gold and yellow with a translucent yellow/green rim. Vivid aromas of white peach, yellow apple, meyer lemon, vanilla bean, lemon blossom, honey, peony and jasmine blossoms crash into a solid vertical wall of limestone minerality. This is a flawless wine and, as always, the palate is where Jean-Marc’s Les Vergers distinguishes itself. It is remarkably enjoyable now with a mouthful of luscious, fleshy white and yellow fruits, but everything is wrapped around a powerful core of acidity and freshness, making it an ideal candidate for cellar aging. I had a difficult time not emptying this delicious bottle before dinner but I’m confident it will only grow more mysterious and exotic with cellar age. I recently unearthed Pillot’s 2008 Les Vergers (the first Pillot ever offered on Somm Select!) from my cellar and it was just perfect, with nuttier aromas and an intoxicating salinity beginning to dominate the youthful fruit. So, my point is that whether you enjoy the ‘14 now or in 7-10 years, just follow the same simple approach and you will not be disappointed: decant for 30-45 minutes and serve in large Burgundy stems at 60 degrees. And while you might scratch your head about pairing white Burgundy with Indian food, I can promise that the citrus/yogurt marinade used in this epic Tandoori game hen recipe is a sneakily compatible companion.     The wine comes from the Leflaive home village and the blend (from more than 20 parcels) demonstrates the intimate knowledge the family has with its terroir. It has a fine balance between the ripe yellow and white stone fruits and acidity. These are given structure by the wood aging and strong mineral texture.     The Montrachet 2011 reveals a lovely golden colour. The nose is complex. Aromas of vanilla and honey match well with the scents of crusty almonds and yellow peach. Offering a powerful palate, notes of vanilla are revealed again. Aromas of peppery mint appear later. The mix of sap and mineral notes brings a sweet length to this vintage.

    Domaine Marc Morey is located Chassagne Montrachet, Cotes de Beaune. This climat called Referts stands as one of the best in Chassagne. (between Meursault Charmes and Chassagne 1er Cru Perrieres) 9ha Domaine created in 1919 Aged for 10months on its lees in 35% new French barrel 2007 is a great vintage for whites in Burgundy, showing vibrant acidity. Beautiful balance between roundness, tension and minerality. Super crisp, flinty, stoney and lemony finish. Feels like drinking fresh oyster water !
