    The Balvenie Caribbean Cask 14 year old single malt whisky has been matured in traditional oak whisky casks for 14 years, and then ‘finished’ in casks that previously held Caribbean rum. To create the ideal finish Malt Master David C. Stewart MBE filled American oak casks with his own blend of select West Indian rums. When he judged the casks to be ready, the rum was replaced with the 14 year old spirit and the wood was put to work adding the final touches. The result is an exceptional single malt whisky with the traditional smooth, honeyed character of The Balvenie married with notes of toffee and a hint of fruit, with a warm, lingering finish.     The Laphroaig Islay Single Malt Scotch Whisky 10 years is really smoky and iodine rich. It has to be one of Scotland's most characterful drams. Laphroaig are known for their medicinal malts, and the classic 10 year old is no exception. Tasting note: Nose: This opens on big, smoky muscular peat notes. There are spices, and liquorice, as well as big dose of salt. This whisky has become slightly sweeter in recent years, and it appears beautifully on the nose, amidst the classic iodine/sticking plasters and cool wood smoke. Palate: Seaweed-led, with a hint of vanilla ice cream and more than a whiff of notes from the first aid box (TCP, plasters etc). The oak is big, and muscles its way into the fore as you hold this whisky over your tongue. An upsurge of spices develop - cardamom/black pepper/ chilli. Finish: Big and drying, as the savoury, tarry notes build up with an iodine complexity. Overall: The only malt from Laphroaig's range that John Campbell recommends with water, do try it. It opens up the palate massively, providing a dazzling array of additional flavours.     Released 2004, this bottling was aged for around five years before being finished in a quarter cask for several months, the size of the cask is quite small, thus does not require such a long maturation. This remains a truly great achievement from Laphroaig. Tasting note: Nose: Oily and buttery nose, with toffee, nuttiness, hickory, bicarbonate of soda, rum and raisin ice cream and zest. Palate: Big rush of sweetiness, in fact it's an explosion of sweetness, with fiery chilli heat, TCP, sweet cereals and a touch of cola syrup. Finish: Medium-length, but becomes fruity, with custard and cigar smoke.     An easy favourite of many a whisky drinker. The 12 year old Sherry Oak by the Macallan has consistently been voted as being amongst the top of all 12 year old whiskies in the world. It is smooth and balanced and simply appeals to all who are looking for a go-to everyday drink. NOSE: Crisp with hints of sweetness from sultanas and fresh apples. There are also notes of sherry and syrupy fruitiness finished with wood smoke. TASTE: Smooth. Very well-balanced dried fruits, sherry, smoke and spice. FINISH: Medium length with toffee, dried fruits and smokiness and spice.
